What's for dinner this week? (The Diet starts NOW edition!)

One of the things that I want to do in 2016 is to plan our dinner menus weekly and post them here for accountability.Breakfasts are usually yogurt and fruit or cereal and fruit for the kids and Bill and I find whatever we are in the mood for. Lunch is usually something quick for Benjamin (chicken nuggets, corn dog, PB and J) with fruit and leftovers for Bill and I. During the school year, Rebecca and Jacob get free lunch at their school. That leaves dinner for the family....

I started menu planning at the beginning of the year and I will say that with a few exceptions, it has worked!







HOW DID WE DO LAST WEEK???

MONDAY::: Chicken and cheese casserole and green beans-- YES

TUESDAY::: Cheeseburgers and steak fries--- YES

WEDNESDAY::: Cajun chicken, julienne potatoes, peas-- YES

THURSDAY::: Spaghetti with meat sauce-- NOPE...we went out to eat at Bob Evans instead. It was a day of dealing with an appointment for Jacob and I just felt like we needed to get out.

FRIDAY::: Fish, macaroni and cheese, and broccoli-- NOPE... I just wasn't feeling it today, so I ordered Pizza Hut pizza :(

SATURDAY::: Waffles, sausage, bacon, fruit--- NOPE, however I did make the spaghetti that was supposed to be Thursday

SUNDAY::: Homemade pizza (maybe date night??)  -- NOPE but I did make the waffles, bacon and fruit that was supposed to happen Saturday. 

So this past week started out well, and then went down the tubes. I don't know what went wrong, I was battling major depression, we were all fighting head colds again, stress about Jacob's doctor's appointments and just overall not feeling it. 

THAT BEING SAID, IT IS TIME TO GET BACK ON TRACK. HUBBY AND I ARE COMPETING IN  A WEIGHT-LOSS COMPETITION WITH EACH OTHER (which I will talk about later today or tomorrow), SO THE DIET STARTS NOW. WE HAVE BEEN EATING LIKE CRAP AND THAT NEEDS TO STOP AS THAT IS NOT HELPING OUR DISPOSITIONS. 

SO WHAT ARE WE EATING THIS WEEK FOR DINNER?    

MONDAY::: hot dogs, baked beans, salad

TUESDAY::: Crockpot Sweet and Sour Chicken with rice (new recipe)

WEDNESDAY::: Turkey Smoked Sausage Bake and salad

THURSDAY::: Chicken enchiladas, mexican rice and corn

FRIDAY::: Fish, baked potato (for Bill and I), macaroni and cheese (for kids) and green beans

SATURDAY::: Homemade pizza and fruit

SUNDAY::: ???? 

So there you have it for this upcoming week. It is time to get back on track and eat better. When I eat better I feel better overall and I don't get quite as depressed and anxious.              
 
Hopefully, I will be able to stick to this plan and can report back success next week!

  1. There must be something going on in the blog-o-sphere because I am trying to lose some weight too! I am a stress eater and have gained a LOT recently. I consider this a frugal endeavor since I don't want to have to buy new spring/summer clothes! ;) Good luck!

    1. Exactly! I have been major stress eating and when I stepped on the scale this morning, it hit me how much weight I had gained :(

  3. When you are having a great day, cook an extra meal and freeze it for your own back up plan. Cheaper and healthier.

    1. Definitely an idea worth remembering :) The problem I am having now is that I am trying to use up everything in our big freezer so I can defrost it. I think after this week, I can defrost it and fill it with healthier options.
