Menu Plan Monday: the back to work edition

Well Summer went by WAY TOO FAST!!! Tonight is open house at the school that I work at and tomorrow I go back to work...I can't say that I got everything done on my summer to do list but I did get a lot accomplished this summer so that is great.

When I go to work tomorrow I will be starting my new position--Team Leader--in the extended care program. Yay for more hours! And I found out yesterday that I will be getting a raise as well! DOUBLE YAY!!!!

Well since I will be at work in the afternoons, dinners will have to be made the morning of to be able to reheat, or be something quick and easy that Dear Hubby can make....so for this week this is what I have come up with:

Monday: Lasagna and green beans

Tuesday: Baked chicken, augratin potatoes, fresh green beans (will make in the morning, all hubby has to do is steam the green beans and reheat the chicken and potatoes)

Wednesday: taco bake for us, pizza for the kids (will make taco bake in morning, hubby can throw the pizza in the oven for the kiddos)

Thursday: Chicken and cheese casserole and veggies (will make in morning), chicken nuggets for kids

Friday: hot ham and cheese sandwiches (will prep in morning, so all hubby has to do is put in oven), corn and leftovers

Saturday: BBQ ribs in the crockpot, carrots, green beans

Sunday: ????

If anyone has any more ideas about easy meals that Dear Hubby can make, please feel free to let me know! THANKS!

Five Question Friday

Here's to another edition of Five Question Friday, where you the reader can learn just a little bit more about me, the author of this here blog.

1. Do you close the bathroom door when you are home alone?

---Yes and No. If it is just the kids and I, then no because one of them is going to come in anyways. If Bill is home then yes I do because then he can watch the kiddos.

2. You have to walk around with a word on your forehead. That word describes you. One word. What is it?

---Loyal

3. What store do you refuse to shop at and why?

---I don't really refuse to shop at any stores. There are some I avoid because they are a) too expensive (ie. Saks Fifth Avenue, etc.), b) they only have clothes that are too "young" for me (ie. Forever 21, Aeropostle, etc.) or c) they are just too far away for me to get too.

4. If you participated in arranged marriages for your child(ren), who would you choose for your child(ren)?

---I would choose 2 different friends' kids in Australia.
Rebecca would marry Robert.  Jacob would marry Celeste.
That would give us an excuse to move to Australia.

5. If you could pick how and when you would die, would you?

---I would I think. I would choose to be over 100 years old and die in my sleep with having said my goodbyes to my loved ones. And I would ask that if my hubby would choose, we would choose to die at the same time in our sleep holding hands.

So there you have it, another little glimpse into who I am, if you care to know more about me. For more answers, please visit the Five Question Friday blog hop, sponsored by My Little Life .

31 Day No Bad Food Challenge: Days 13, 14, 15 and 16 and other news

Oops...well I keep forgetting to update this challenge BUT I have been doing it. I still have not had any junk food, fast food, or pop. That doesn't mean that I don't want any. There have been a couple days where I have really wanted chocolate and pop, but I haven't wavered.

Yay Go ME!!!!

In other news, there are some changes coming. I found out something yesterday that is going to potentially change the landscape of my life. I don't want to say what it is yet, because I know that there are people that I know that read this blog that need to hear it from me first. However, when the time is right I will share. I am going to have to reassess A LOT OF how we are living and spending money......Should be interesting....

Menu Plan Monday: The week before I go back to work edition

This week is the last week of my summer vacation before I start back to work. I work in an extended care program at our local Catholic school and I am going to be busy, busy, busy. I am being promoted to "Team Leader" for this year and will be working every day as opposed to working only 2 days a week last year! Yay for more money and for more hours! Now I just have to get organized enough to make sure we have a good dinner every night and we don't fall prey to McDonald's, etc. once I go back to work.

For this week, I will be cooking some things that might take a little prep, as I won't have much time to make those types of meals once school starts back.

So for this week we will be eating:

baked chicken, veggies, rice
taco bake and cheese quesadillas
pulled pork sandwiches, baked beans, fruit salad
baked fish, macaroni and cheese, green beans
spaghetti
?????
?????

Am not sure what we are having 2 nights. Feel like I want to try something new. Anyone have any suggestions????

I really want chocolate....

13 days in and this is the first day where I REALLY, REALLY want chocolate. I am trying to keep myself distracted so that I don't cave.

What are your favorite things to do to distract yourself?

On my agenda today....

I have LOTS of things that I want to get accomplished today...Maybe if I list them here I will be more accountable to them. So my to do list is:
  • menu plan for next week
  • make out grocery and Walmart list for tomorrow
  • laundry (wash, dry, fold and put away at least 2 loads)
  • sweep and mop the kitchen, dining room and living room floors
  • exercise for 40 minutes or more
  • clean off the mantel
  • plan at least 2 upcoming blog posts
So I had better get off of here and get started! LOL I will be back later to update!

31 Day No Bad Food Challenge: Day 12

Well I did it again. I made it through Day 12! Go ME!!!!

Honestly this is getting easier and easier! I really think that I am changing my lifestyle as I am craving fresh fruits and vegetables and not so much processed food. Don't get me wrong, I don't think I will ever give up chocolate however I am learning that eating a ton of processed foods makes me feel BAD and just BLAHHH!!!!

For Day 12 I ate good and I exercised for 45 minutes on the Wii Fit Plus! It was a good day!

Here is what I received....

I received 8 chocolate bars and a bag of chocolates! I put them into my freezer so that I can enjoy a piece after my August challenge is over.....Until then, I would like to thank Julie at My Kansas City Mommy

31 Day No Bad Food Challenge: Day 11

Day 11....Well my hubby caved. He actually caved a couple days ago. I don't blame him really. He is in an extremely difficult time of year for his job...read BUSY, BUSY, BUSY... and to ask a guy who usually drinks lots of Mountain Dew to give up junk food, fast food and pop during this time was asking a lot. Well he gave in and decided that he needed his Mountain Dew. In reality I don't blame him. It really is the wrong time of year for him to do something like this. So I don't blame him and am not disappointed.

As for me, I am still in this. I have not had any junk food, bad fast food, or pop since July 31! YAY!!! Today I went into work for a couple hours and my boss was giving the kids small candy canes and I wasn't even tempted. I just thought I don't want that because I am eating better. I didn't even think about this challenge so hopefully that means that my mindset is changing. I hope so.

Today, I did well on eating and I exercised for 40 minutes on the Wii, while I caught up on an episode of "19 Kids and Counting."

I also think that I have come up with a plan for when I go back to work and Rebecca starts school. I am NOT a morning person so to ask me to get up early to exercise is NOT happening. However, if I can get housework and stuff done in the morning, take Rebecca to school, go to work, come home, get dinner, get kids in bed by 9:00pm then exercise from 9:30-10, I will still be able to get into bed at a reasonable hour. That is my plan anyhow....

What I have been reading

Over the last several weeks, I have read a few great books. I wanted to share them with you....

Have you read any good books lately?

31 Day No Bad Food Challenge: Days 7,8,9, and 10...Yes I am a little behind..

Well time just keeps getting away from me. Boo...

Things have been pretty busy around here. I have been working a couple days, tutoring one day, dealing with busy and stressed hubby, kids who are going nuts, trying to get things together for Rebecca to go to school etc. It has just been crazy!

However, the good news is...so far I have STUCK to the challenge even with temptations a plenty. YAY!

Here is a recap of days 7-10:

Day 7, we had a cookout at my parents house. I brought a salad to share. Usually this is where I pig out, as my mom always has lots of snack foods out and chips, cookies, etc. But I was good. I did have some cashews but I think that was okay. The bad thing was that I did not exercise :)

Day 8, was spent at home dealing with cranky, stressed hubby. I did fine with the eating, however I did not exercise again. :(

Day 9, I worked at my part-time job at the school in the morning. Then my boss wanted to take me and my kiddos to lunch at McDonald's with her kiddos for lunch. That is okay but I gave up fast food. After talking it over with my husband, we decided it was okay if I had McD's as long as I ordered something healthier than a Big Mac. I had a southwest salad and a light lemonade. Normally I would have had chicken nuggets, fries and diet coke. Big difference in what I ordered. It was a nice lunch though and the kids got to play. I did not do so well the rest of the day though with food. I ate way TOO many carbs, had a bagel and a baked potato for dinner. I knew that I was going to pay for it...I did exercise on the Wii Fit for 20 minutes and the Zumba for the Wii for 20 minutes!!

Day 10, today I had to tutor this morning. I had NO, ZERO, ZILCH energy. I really could have put my head down and slept. I felt so out of it. I think that most of that has to do with over-doing the carbs yesterday. Need to make sure that I am sticking to a good meal plan. I did have temptation today, in that I received a prize from a blog win in the mail today that I will share with you in a few days. Let's just say it involved chocolate. However I am being good and not eating any of it. I put it in my freezer for later. I also am proud that I exercised tonight. It was only for 20  minutes, but that is my goal for the days.

So over these days I have learned that I do have willpower. I have also learned that I need to be more specific in what I am eating and make sure I am doing protein in ALL meals.

I am just shocked and happy with myself that 10 days in and I have not caved yet! I am doing this! :) :)

31 Day No Bad Food Challenge: Day 6...an observation and a confession

Day 6 was a good day for the most part.

I did a bunch of running around with my mom, sister, brother and my kiddos. We went to the farmer's market Saturday morning, to the grocery store, home to get Jacob so Bill could go to work, Walmart (to do school supply shopping), King's Garden for lunch, craft store, Kmart and Staples. Then I came home, did laundry, exercised for an hour!, organized our home notebook and watched a movie. It was an overall exhausting day!! It is on these types of days that I would normally turn to caffeine and sugar to get me through. However, I didn't need it! YAY!!! I can feel the changes and I am feeling good!

Another thing that I have observed is that I need protein in to stay full. I had cereal and a banana the other morning for breakfast and I was starving a little while later. However, if I have some protein (either some turkey bacon or an egg) then I stay full longer! So I am going to try to make sure that I make sure I have some protein with most meals and snacks. I have been loving having a snack of green grapes, colby cheese, and some Kashi pita crisps. It is YUMMY!!!

Now on to what I ate: HERE is my confession: I didn't keep track of what I ate. I am soooo bad about keeping track! I think I am just going to not keep track again, unless I decide to do calorie counting.

What I did eat though (as far as I can remember)

cheerios and a banana---hungry and I knew that I needed to eat before the farmer's market
Chinese food---lettuce wraps with chicken, egg roll, veggie spring roll, water
--decided not to have my old standby--sweet and sour chicken---instead had the wraps and they were
       SOOOOOO good! And very filling
grapes, cheese, Kashi Pita Crisps
lots of iced tea and water

Now that I have it all in black and white, I guess I really didn't eat very much. Oops...Maybe that is why I woke up STARVING this morning. Need to make sure I am eating at regular times and eating right! I think that in this weeks menu planning post, (coming up on Monday), I am going to also plan out breakfasts and lunches for the week too so I at least have a plan!

31 Day No Bad Food Challenge: Days 4 and 5 and a weight update

Just a quick update to say that yes I am still doing this...just didn't have time to blog about it until now. :(

Day 4 was interesting. I didn't get a lot of fruits and veggies in, as I was stressed most of the day. I was babysitting for a friend of mine, so I had 2 bonus children most of the day (ages 7 and almost 5). That made life a little crazy around here. I will say that I did not cave and have cookies or anything though so that is a plus. However, diet wise, it wasn't my best day on this challenge so far.....

9:30 pancakes with butter, syrup, turkey bacon, cantaloupe, strawberries
breakfast time. Hungry, but after I ate I felt satisfied.

12:30 2 small bites of Jacob's pb and j sandwich
little hungry, ordered pizza for the older kids but needed to feed Jacob.

1:15  4 pieces of pizza
        STARVING---kids are driving me nutty

9:30 pancakes, turkey bacon
STARVING--- did not plan well for dinner for myself and felt so hungry

I did do 32 minutes on the Wii Fit for exercise.

DAY 5---today was back to normal for me. Jacob was being kind of whiny, but that was okay.

9:30 cheerios with milk
Breakfast...don't have any protein as we are out/ need to go to the store

10:30 wheat toast with apple butter
         hungry, needed something

11:00 1/2 strawberry
was cutting up fruit. Not really hungry

1:30  peanuts
was doing errands. Forgot to eat lunch before I left. :(

3:00 bananas, iced tea
Starving. Back home from errands, but don't want to eat anything big b/c going to start cooking dinner

5:45  marinated baked chicken, ratatouille, baked potato with butter
really didn't want chicken, but really, really wanted the veggies!

10:00 strawberries
         wanted something sweet

Also did 30 minutes on the Wii Fit.

AND....I know this isn't a weight loss challenge. However, I weighed in this morning and...in the last week, I have.......

LOST 5 LBS.!!!!!!!!!!!

I am super stoked about that and hope that trend continues....still need to work on my eating schedule though.

Five Question Friday

Here's to another edition of Five Question Friday, where you the reader can learn just a little bit more about me, the author of this here blog.

1. Do you have siblings and are you close with them?

I have 2 brothers and 1 sister, all younger. I am kind of close to them, but not really, really close. My brother #1 is 5 years younger than me and we don't see eye to eye on some things, but there are other things that we are very close on. My younger brother #2 and my sister are 20 years and 17 years younger than me respectively, so I am as close to them as I can be. They are family and I LOVE them dearly.

2. Would you rather be slightly UNDER weight or slightly OVER weight?

Can I plead that I just want to be at a good weight. Underweight would make me look anorexic, and overweight is what I am now. Why can't I just be at a good weight for me?

3. What's your favorite State Fair food to splurge on?

FUNNEL CAKES....SOOOOOOO YUMMY!!!!!!

4. What are your thoughts on your kid(s) going to school in a few weeks?

Well Rebecca is going to be going to school for the first time. I am full of different emotions. Happy for her. Sad for us, because she is growing up. Excited to see what the year brings for her. Nervous for how I am going to be on her first day of school, etc.

5. Pool or Ocean?

A pool right by the ocean! I love to look at the ocean and walk along the beach, but I don't like swimming in the ocean, so a pool by the ocean front would be ideal for me.

So there you have it, another little glimpse into who I am, if you care to know more about me. For more answers, please visit the Five Question Friday blog hop, sponsored by My Little Life .

31 Day No Bad Food Challenge: Day 3

I think I can.

I think I can.

I think I can.

So far, so good. Although I have been tempted about a billion times, I have not caved in and had bad food! YAY! GO ME!!!

Day 3, I was SOOOO TIRED all day long. I didn't feel like doing anything and just felt blah. Feel a little more refreshed as I begin day 4 so hopefully it will be better today. Yesterday my mom brought over a pitcher that I can use to make 2 quarts of iced tea with so that I will have it at the ready and hopefully will make me drink more liquids!

Now on to what I ate on day 3:

8:50   cheerios, milk, banana
was hungry, needed to eat before tutoring

11:00 3 cherry tomatoes
very hungry, wanted something sweet, but am tutoring and can't

12:15 cauliflower, carrots, cucumber, ham sandwich, pretzels, dill dip, water
         lunch time. STARVING

2:30 a couple pancakes
wasn't really hungry, but was making a batch for the freezer

5:00 strawberries, cherry tomatoes
wanted something sweet, was cooking dinner

5:30 spaghetti, salad
Dinner time. Was hungry and thirsty

8:30 diet iced tea
        need to drink more

10:00 honey nut cheerios and milk
was very hungry, needed to eat something

So there was day 3. Not too bad. I figured out a couple of things. I need to eat more protein with my meals, because that fills me up. And I need to make sure I am getting enough to drink. I don't need to get dehydrated!

Anyone have any ideas for quick ways to get more protein into my diet?

31 Day No Bad Food Challenge: Day 2...this is harder than I thought

Before I go into how day 2 went, let me just say this....

THIS IS HARD!!!!

It is harder than the exercise challenge. It is hard, because I love my sweets. I love chocolate. I love baked goods. I do, I do, I do. However, my waistline doesn't love them. And I am not getting any younger, so I have to keep reminding myself why I am doing this.

I am doing this to become healthier. I am doing this so that I can hopefully break my sugar addiction. I think it is  an addiction and I am going through withdrawal. I am SOOO tired. And I didn't realize before how much pop I was drinking. I was basically giving myself so much sugar and caffeine throughout the day that it was giving me energy.

Now on to day 2.... this day was going to be a challenge, as we were meeting an old colleague of mine (who just moved back to Ohio after living in Vegas for the past 5 years) and her kids at Chuck E. Cheese's for lunch and for the kids to play. I did not get pop, which was good. I had iced tea instead. But I did get pizza which wasn't too good, considering I could have gotten the salad bar. Oh well, better choices need to made next time.

This is how the rest of my day shaped up to be like:

9:00AM--- cheerios, milk, banana
                   VERY HUNGRY

10:30 -----diet iced tea
need to remember to drink more. Don't want to get dehydrated.

12:00--- peanut butter sandwich, skim milk
just worked out and need to eat.

2:00--- 3 pieces of pizza at Chuck E. Cheese's, iced tea, celery stick (from hubby's wings)

5:30--- 3 cherry tomatoes, breakfast burrito, strawberries, cantaloupe, water
            very hungry

8:30---so tired. I have no energy. Fell asleep on the couch while Bill was getting the kids into bed.

Overall it was okay day. There was a couple things I need to work on.... I NEED to drink more water and iced tea. I don't think I am drinking enough. Also I need to make a plan for days that I am out and about so that I don't gorge on lots of pizza and bad food.

Any one have any ideas?

31 Day No Bad Food Challenge: Day 1

So day 1 of the no bad food challenge is over. And I did it. I did not eat any sweet stuff or junk food today. That doesn't mean the temptation wasn't there. Believe me it was!

Here is what I ate and what I was feeling:

8:45am  banana
felt like I needed to eat something while I was getting the kiddos their breakfasts

10:00 homemade breakfast burrito, strawberries, water
Was HUNGRY and felt like I needed protien

11:30 decided to exercise. Did 25 minutes on the Wii Fit Plus, and 10 minutes on new Zumba game.

1:00pm  peanut butter and jelly sandwich, peach, blueberries, skim milk
lunch time. After Lunch I REALLY, REALLY wanted a cookie. But I didn't.

2:30 iced tea, carrots, cucumber, cauliflower with dill dip
Rebecca was having cookies for a snack and they looked SOOOO GOOOOD. Realized I was hungry
too so I got raw veggies. Felt good for not caving.

5:05 REALLY wanted something sweet, but making dinner

5:30 1/2 pulled pork sandwich
was waiting on Bill to get home, but was hungry so ate 1/2 a sandwich with the kids while they were
        eating dinner

6:00 pulled pork sandwich, cherry tomatoes
still waiting on Bill, Was VERY HUNGRY so made a small sandwich and had 5 cherry tomatoes

6:30 pork sandwich, baked potato with butter, steamed green beans
        was VERY HUNGRY

7:00 was very, very tired. No junk food throughout the day has made me tired.

9:00 want sweets, am very tired, went to bed.

So, all in all I learned something. There are many times where I would just mindlessly eat junk because I wanted something sweet. That is NOT the best way to live my life. I also learned that I need to eat something about every 2-3 hours or I get really hungry. Need to plan better. But overall, I think I did pretty good for day 1. Other than being exhausted at 7:00 pm, there was no other side effects.

Got to keep it going for the next month....

31 day exercise challenge: Wrap-up

July 30: I did 45 minutes on the Wii Fit Plus game.

July 31: I mowed the grass, which took 45 minutes and it was SOOO HOTTTT!!!!! I also did 25 minutes on the Wii Fit plus.

Which means....

 I DID IT!!!!

I exercised for 31 days straight!

YAHOO!!!!!!!

I didn't think that I would be able to do it, when I started at the beginning of the month. As the month of July went on though it became easier to exercise and to find time to exercise. I realized that in fact I like to exercise. It felt good to move! And it was contagious...Rebecca would want to exercise after I did! So that was a plus! On my birthday, I received a new Wii game too that I think I will love...It is Zumba for the Wii.

This is going to make it much easier to continue to exercise. Because YES I do INTEND to continue to exercise. I won't beat myself up if I miss a day, but I plan on exercising in some form every day.....

I also realized during the month of July that my eating sweets and junk is way out of control and that I need to work on that. So that gave me the idea for my next 31 day challenge....for August I will be having a no bad food, no junk food, no fast food and no pop challenge.

I am super excited that I made exercise a habit! I feel so good about that!

Now on to August, where hopefully I can make eating better a habit......
