Happy Friday everyone! We made it to the weekend! Yahoo! Remember the other day when I said the weather was gorgeous... well, I spoke too soon. Today we are dealing with storms and we are supposed to have severe weather later tonight with high winds and flooding rains. Oh well. It is what it is.
Today, I wanted to share a new recipe that I made last night. During the week, I take my kids and my niece and nephew daily to pick up lunches that our local school district offers for the Summer Food Program. Last week, there was a magazine in the bag that had kid friendly recipes.
As I was flipping through it, I came across a recipe for cucumber and peach salad that sounded great and that fits into my diet plan.
I made it last night to go along with our dinner of BLTs and coleslaw. The only thing I didn't do was add salt. I also used lime juice. The kids LOVED it! Who knew that cucumber and peaches go good together?!

I missed your posts and see you are back now. I loved summer vacation when the kids were home from school but where ever we lived, there were lots of free summer programs- tennis, gymnastics, swimming and even drama. I guess it was our tax dollars at work. I did see the libraries here are just having reading programs online boohoo. The kids loved the events they had and reading incentives. My GD in Atlanta has been to 2 camps this summer but they weren't free and she's going to a Harry Potter one before her school starts in early August. I'm excited because they are coming to visit the week of the fourth! Take it easy on yourself and rest when you can. I love a good cucumber salad but I'm not fond of peaches- I know! I much prefer vegetables to fruit.
